Gluten-free oat and cranberry cookies

Happy Spring Everyone!

We are all on a slight home arrest. Covid-19 spread its tentacles all over the world, and the world stood still. We are at home with our children; better and worse halves; pets (who probably can’t believe their luck) and the cupboards full of toilet rolls As we are now on lock-down and should leave our houses only when we absolutely have to, I suppose quick escapades to our local shop for a ‘midnight snack’ have come to an end as well (she sobbed quietly in her tissue, washing her hands straight after). So let’s welcome home baking – with kids preferably. I wanted to share this recipe with you for some time already, but these cookies are so popular in my household that they are disappearing before I even have time to take a nice and arty photo of them. The same happened today and I didn’t have time to take a photo, but I decided to share it with you regardless.

This recipe is gluten, egg and dairy free, but if you wish so, you can use butter instead of spread and normal flour instead of gluten free. The recipe is very simple and could be a great maths at home activity.

Gluten-free oat and cranberry cookies   

INGREDIENTS:

125g gluten-free self-raising flour

125g oats

125g dairy free spread

75g sugar (could be maple syrup for healthier option)

1 tbsp. of honey/agave syrup for vegan option

Pinch of salt

75g cranberries

20g sunflower seeds

½ tsp cinnamon powder

METHOD:

Heat the oven to 170C.

Prepare two flat trays and cover them with baking paper.

In a little pot heat the dairy free spread, sugar, honey, and cinnamon, mixing frequently. Do not boil, just let it melt. When it’s melted take it off the heat.

In a separate bowl mix flour, oats, salt, cranberries and sunflower seeds. Add wet ingredients to dry ingredients and mix well till all the ingredients combine. Using a table spoon, scoop the mixture into similar size balls and place on the baking tray. Leave a few centimetres between them, so they won’t touch each other. Flatten each ball with a wet fork, so they have more of a cookie shape.

Bake 20 minutes, or until golden brown.

After taking out the oven, leave cookies to cool before indulging in their sweet tastefulness.

Like you can see this recipe is really easy, but truly delicious.
